Garlic Shrimp Pasta

Good evening, everyone!  I hope everyone has had a great week!

We've had a busy evening tonight.  After a quick trip to the grocery store for a few essentials, I headed home and had the pleasure of cooking dinner with Troy.  We made a fairly simple, yet very tasty pasta dish and then spent some time with random household chores.  We're now watching my alma mater Wichita State University play in the NCAA Sweet Sixteen!  Go Shox!!

 
Now onto the recipe!
 
Ingredients:
1 tablespoon olive oil
1 tablespoon minced garlic
4 cup green onion

1 cup broccoli florets
1 cup sliced carrots
1 tablespoon oregano
1 teaspoon thyme
1 teaspoon basil
pasta of your choice (4 servings)
salt and pepper to taste
Worcestershire sauce
1 pound precooked shrimp, deveined with no tails
parmesan cheese
 
Directions:
Heat olive oil in saucepan.  Add carrots and garlic.  Once carrots soft, added onion, broccoli, oregano, thyme, basil and Worcestershire sauce.  Sautee mixture for 5-10 minutes before adding shrimp.  Once all vegetables and shrimp are heated through, add salt and pepper to taste. 
 
In the meantime, prepare pasta according to the package directions.  Drain pasta.
 
Serve vegetable and shrimp mixture over pasta.  Sprinkle with parmesan cheese for additional flavor.
 
Tomatoes would make a great addition.  For us, however, not a good option.  We both hate tomatoes!  With or without the red fruit, we had a great balance of veggies, shrimp and pasta.  Enjoy!

Oatmeal Banana Cookies

We woke up to several inches of snow and cold this morning.  Who wants to get out in that?!  Not me!  I want to stay where its nice and warm and where I can cuddle up with this precious little guy.

 
To start off our day in, I made Oatmeal Banana Cookies inspired by The Burlap Bag's Two Ingredient Cookies.  I added a few extras ingredients and they turned out a winner!
 
Ingredients:
2 large bananas, mashed
1 cup quick oats
1/2 tsp vanilla
1/4 cup chocolate chips
cinnamon-sugar mixture
 
Directions:
Preheat oven to 350.  Mix mashed bananas, oats, vanilla and chocolate chips together until all ingredients are wet.  Line a cookie sheet with parchment paper (or grease a cookie sheet) and scoop mixture into individual cookies on sheet.  Sprinkle with cinnamon-sugar.  Bake for 12-15 minutes.
 
We made 12 cookies with our mixture.

Banana Pancakes

We're always looking for creative breakfast ideas.  And who doesn't love pancakes?  I found a delicious banana pancake recipe from Iowa Girl Eats and knew we had to try it!

Ingredients:
1 cup flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons Splenda
1 egg, slightly beaten
4 tablespoons melted butter, divided
1 cup milk
2 bananas, mashed to desired consistency
syrup

Directions:
Whisk together flour, baking powder, baking soda, salt and sugar in a large bowl.  In a separate bowl, whisk together eggs, butter, and milk.  Pour wet ingredients into dry ingredients then whisk until combined.  Fold in bananas.
Heat a large skillet over medium heat.  Brush remaining melted butter, then pour 1/4 cup batter to form each pancake.  When bubbles appear all over the top, flip then cook until golden brown.  Repeat with remaining batter then serve with maple syrup.

Peppermint Shake

Happy St. Patrick's Day!!  I hope you had a wonderful weekend!

T and I spent the morning re-organizing our kitchen and the afternoon with his family.  To celebrate St. Patrick's Day, we decided to make delicious Peppermint Shakes after we got back home.

Ingredients:
Vanilla Soy Milk
Vanilla Ice Cream
Peppermint Extract
Whipped Topping
Green Food Coloring
Blender

Directions:
Blend milk, ice cream, extract and food coloring in a blender.  Use the extract sparingly as a little goes a long way.  Pour into a glass and top with whipped topping.  Enjoy!

Egg Muffins

Happy Saturday!  I hope everyone had a wonderful week! 

I've seen several pins on Pinterest of egg muffins recently and thought we should give it a try.  I used an Egg Muffin recipe from Spark People as a guide and here's what I came up with.

Ingredients:
6 eggs
1 cup liquid egg whites
turkey bacon
peppers
onion
garlic salt
salt
pepper

Directions:
Preheat oven to 375.  In a bowl, whisk eggs and egg whites together.  Add in meat and veggies.  Season to taste.  Grease a muffin tin and pour mixture into cups, 2/3 full.  Bake for 17-20 minutes or until inserted toothpick is clean.

Store in the refrigerator for up to a week.  To reheat, microwave for 30-60 seconds.

Strawberry Banana Muffins

Oh, muffins, how we love thee.  Seriously.  They are T's favorite thing.  Ever.  Newest muffin recipe: Strawberry Banana Muffins from A Hint of Honey.  Yum, yum!

Ingredients:
2 ripe bananas, mashed
1 1/2 cups strawberries, sliced and diced
1/4 cup honey
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsweetened applesauce
2 eggs
1 teaspoon vanilla extract

Directions:
Preheat oven to 350 degrees.

In a small bowl, combine the strawberries and honey.  Set aside. 
In a medium bowl, whisk the flour, baking soda, and salt.  Set aside. 
In a separate bowl, combine banana, egg, applesauce and vanilla.  Add wet ingredients to the dry until just moistened.  Fold in strawberry mixture. 
Spoon batter into lightly greased muffin tins.  Bake for approximately 20-25 minutes, or until inserted toothpick comes out clean. 
Makes 12 muffins.

Pinwheel Quilt Preview

Happy Friday!  I hope everyone had a great week! 
 
I've spent half of the week at home under the weather.  Not exactly my idea of a good time.  I finally had some energy today, so I started working on a Pinwheel quilt.  I still need to choose fabric for borders to give the quilt some size, but here's a quick preview. 

 
I bought 2 Good Morning charm packs a Quilt Shop Hop last fall from the Me and My Sister Design line.  To make the pinwheel, simply cut charm square in half and sew into the pinwheel pattern.  I ended up with 21 completed blocks, and chose my 20 favorite for the bulk.  Right now the quilt is about 32x40.  I'd like the finished size to be somewhere around 50x60, so I'll be in the market for great coordinating fabric to finish out the borders, backing and binding.  I'll keep you posted!
