Egg Muffins

Happy Saturday!  I hope everyone had a wonderful week! 

I've seen several pins on Pinterest of egg muffins recently and thought we should give it a try.  I used an Egg Muffin recipe from Spark People as a guide and here's what I came up with.

Ingredients:
6 eggs
1 cup liquid egg whites
turkey bacon
peppers
onion
garlic salt
salt
pepper

Directions:
Preheat oven to 375.  In a bowl, whisk eggs and egg whites together.  Add in meat and veggies.  Season to taste.  Grease a muffin tin and pour mixture into cups, 2/3 full.  Bake for 17-20 minutes or until inserted toothpick is clean.

Store in the refrigerator for up to a week.  To reheat, microwave for 30-60 seconds.
